• Morning Broth •

🥣Ayurvedic Insights:

On some mornings, your body may not be up for a full breakfast. If your digestion is feeling sluggish, this light soup will get you going without bogging you down. 

🥣Serves 4

  • 5 cups veggie stock 

  • ¾ cup of ¼-inch diced carrots

  • ¼ cup of 1/4 -inch diced celery

  • 1 small piece (about ½ inch) kombu

  • ½ cup chopped kale, preferably lacinato 
    Fine sea salt or tamari

🥣Directions:

In a medium saucepan, combine the stock, sweet potatoes, carrots, celery, and kombu. Cover and bring to a simmer over medium heat. Reduce the heat to low and simmer gently, covered, until the sweet potatoes are fork-tender, about 15 minutes. Turn off the heat and stir in the kale. It should wilt and turn bright green in a minute or two. Taste the broth and season it with salt until it tastes good to you. Remove the kombu and serve warm.

🥣Option:

Use any combo of firm and leafy veggies you like here: turnips and daikon work, as do spinach and chard.
